Summer is here guys and gals, and many of you may be thirsting for a light
and crisp refreshing cocktail. The following cocktails are the perfect
compliment to an afternoon bbq or a poolside soiree. The key to making a
great summer cocktail is to try and stay as fresh and light with ingredients
as possible. Citrus based drinks with a bit of bubbly will provide a light, airy
and thirst quenching cocktail. Lets have a look at three cocktail scenarios
that could pair with a light summertime fare. For example…..
With fish tacos, a great complimentary drink would be a spicy Paloma, a
classic Mexican drink that usually plays second hand to the Margarita. It is
refreshing and goes perfect with light Mexican cuisine.

Collins or Tall (12-14oz glass filled with cubed or crushed ice)
1.50 oz Blanco Tequila
.50 oz Jalapeno Infused Simple Syrup
3 oz Grapefruit Soda (Jarritos or Squirt)
Build over Ice directly into the glass
Squeeze of lime with a pinch of salt on top of the drink.

Lets say BBQ ribs are on the grill! You simply cannot go wrong with Jack
Daniels. In this case you might be craving a Lynchburg Lemonade, one of
Tennessee’s southern charms…
Collins or Tall (12-14oz glass filled with cubed or crushed ice)
1.25 oz Jack Daniels Tennessee Whiskey
.75 oz Triple Sec Orange Liqueur
1 oz Freshly Squeezed Lemon Juice
1 oz Simple Syrup
Shake the drink and strain over fresh ice in the glass and top with Club

Garnish with a wedge of lemon

Now suppose you’re poolside and just want a refreshing cocktail while
bathing under the sun. Nothing is quite as refreshing as a crispy grapefruit,
cherry, and cranberry based drink. I call this cocktail the “Grapefruit Cherry
Collins or Tall (12-14 oz glass filled with cubed or crushed ice)
1.5 oz Grapefruit Vodka (Absolut Grapefruit)
.25 oz Maraschino Cherry Juice
3 oz Club Soda or Perrier
Build directly over ice in the glass
Top with a splash (.25 oz ) of Cranberry Juice
Garnish with a lime twist

The key to a summertime drink is to keep the beverage as fresh and as
simplistic as possible. It shouldn’t fill up the one consuming, it should serve
to quench thirst and invigorate the drinker. Keeping it simple and light is the
key to making an amazing summertime cocktail! So kick off your shoes and
feel the soft blades of grass on your feet , take in the smell of a hot grill , and
refresh your tastebuds with one of these thirst quenching libations. Cheers!
